Make Every Night Vegetable City

Last week, I introduced a new term at my place, "VEGETABLE CITY". I keep having the same problem - I eat small portions - and then I'm still hungry. I needed a way to fill up my tummy without eating rice, pasta, or junk food. And so I decided every night would be a "VEGETABLE CITY" night. No matter what I was cooking - turkey sausages, chicken breasts, salmon, or scallops - I accompanied the dish with a huge portion of sautéed vegetables. I made twice the amount of veggies I normally make just to ensure I'd be full. My plan worked. I was filled with great colorful veggies so I stayed away from the rice, the pasta, and the jelly beans.

When you go grocery shopping this week, double up on the veggies, if you make too much, you'll have them for the next night. My favorites are colorful peppers (red, yellow, green), mushrooms, onions, zucchini, and tomatoes. Eat up!
